Imogen Cotter
My name is Imogen Cotter, and I am an Irish cyclist, living and racing in Belgium. I have been cycling since 2017 and I'm very lucky to be doing what I love doing as my job! I am riding with a team in Belgium called Keukens Redant, but when I'm at home in Ireland, I love to head out in the Burren and explore the Wild Atlantic Way on two wheels. I'm delighted to be an ambassador for Clare's Wish in 2021 and hope I can help to raise awareness of the incredible work this charity is doing.
Eoin Sheehan
A 24 year old TV chef and food entrepreneur from Limerick. Having studied and qualified to become a Chemical & Biochemical Engineer in the University of Limerick, Eoin had already started a healthy meal preparation service named 'Country Munch' from his home kitchen in 2nd year and pursued this option instead. Country Munch grew, meal by meal, to stock several gyms and retail outlets around Munster and secured contracts with Limerick GAA, the Munster Rugby Academy and other professional sporting clubs around Ireland - supplying 600+ healthy home cooked meals per week prior to COVID-19.
Eoin himself grew as a brand and influence in the food industry, travelling the country giving presentations and cookery demos at corporates, events and festivals - leading to a role on Virgin Media's Six o Clock show as a resident chef each week. With a new purpose built filming studio, Eoin facilitates cookery demos, cookery classes, corporate workshops, digital content creation and regular TV segments in the new age of virtual events and business.
Named 'RSVP Chef of the year 2019', 'Ireland's 2020 30 under 30 most influential young entrepreneurs' and working in collaboration with global food brands on social media, Eoin's continues to make his mark in the Irish food industry alongside he's meal preparation business.
